To ensure freshness, we limit our roasting days and roast to order. So if your order isn't in by end of day Wednesday, it gets pushed to the following week. Roasting and packaging generally takes place on Thursdays. With shipping on the following Friday-Monday. Local Deliveries and Local Pickups are on Mondays. Look at specific store hours and locations for more information on pickups.

While Sulawesi processes the majority of its coffee in a Wet-Hull manner, the washing station PT Toarco Jaya encourages a more traditional washing from producers. Fermentation is still sometimes a part of the post-harvest processing, but increasingly mechanical demucilaging is more common, and the coffee is typically dried on heavy tarps. The profile of these coffees tends to be more acidic and fruity, with clarity and a creamy body. The cup profile, the additional labor necessary in production, and the lower availability of the top lots of these coffees can make them pricier than other offerings from Indonesia, but we find that the remarkable cups are truly worth it.
