To ensure freshness, we limit our roasting days and roast to order. So if your order isn't in by end of day Wednesday, it gets pushed to the following week. Roasting and packaging generally takes place on Thursdays. With shipping on the following Friday-Monday. Local Deliveries and Local Pickups are on Mondays. Look at specific store hours and locations for more information on pickups.

Sustainably decaffeinated using a process derived from fermenting sugar cane. Ethyl acetate (E.A.) is produced from fermenting sugar cane in a similar fashion as making wine. Actually E.A. is the common ester in wine!
The process works by soaking green coffee in a solution of E.A., which bonds to the salts of chlorogenic acid that naturally occur in coffee and allows for the removal of caffeine. The coffee is removed from the solvent and steamed at low pressure to remove the E.A. compounds, and the finished product retains its flavor integrity but contains almost no caffeine at all. (The beans will contain a maximum of 0.01–0.03% caffeine.)
